Yellow Rice

Ingredients:

  • 2 c. chicken stock
  • 1 c.  white rice
  • 1⁄4 c.  dried minced onion
  • 2 tbsp olive oil
  • 1 tsp ground turmeric
  • 1 tsp garlic powder
  • 1⁄2 tsp ground black pepper
  • 1/2 tsp salt

Directions:

  1. Bring stock to a boil in a saucepan. 
  2. Add rice, onion, olive oil, turmeric, garlic powder, black pepper, and salt. 
  3. Cover the saucepan, reduce heat to low, and simmer until water is absorbed and rice is cooked, about 20 minutes. 
  4. Fluff rice with a fork and enjoy!

Chicken Burrito Skillet

Servings: 6 

Ingredients:

  • 1 pound boneless skinless chicken breasts, cut into 1-1/2-inch pieces
  • 1/8 tsp.  salt
  • 1/8 tsp.  pepper
  • 2 tbsp.  olive oil, divided
  • 1 c.  uncooked long grain rice
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (14-1/2 ounces) diced tomatoes, drained
  • 1 tsp.  ground cumin
  • 1/2 tsp.  onion powder
  • 1/2 tsp.  garlic powder
  • 1/2 tsp.  chili powder
  • 2-1/2 c. chicken broth
  • 1 c.  shredded Mexican cheese blend
  • 1 medium tomato, chopped
  • 3 green onions, chopped

Directions:

  1. Toss chicken with salt and pepper. In a large cast-iron or other heavy skillet, heat 1 tbsp.   oil over medium-high heat; saute chicken until browned, about 2 minutes. Remove from the pan.
  2. In the same pan, heat remaining oil over medium-high heat; saute rice until lightly browned, 1-2 minutes. 
  3. Stir in beans, canned tomatoes, seasonings and broth; bring to a boil. 
  4. Place chicken on top (do not stir into rice). 
  5. Simmer, covered, until rice is tender and chicken is no longer pink, 20-25 minutes.
  6. Remove from heat; sprinkle with cheese. Let stand, covered, until the cheese is melted. 
  7. Top with tomato and green onions.

Cilantro-Lime Rice

Serving: 3 c. 

Ingredients:

  • 1 c.  uncooked rice
  • 2 c. chicken broth
  • 2 tbsp.  lime juice
  • 2 tbsp.  minced fresh cilantro

Directions:

  1. In a small saucepan, combine rice and broth; bring to a boil. Reduce heat; simmer, covered, until liquid is absorbed and rice is tender, 12-15 minutes. 
  2. Add lime juice and cilantro; fluff with a fork.
